Now that the coronavirus is attacking the whole world, a lot of us are in quarantine. I know I know; it is super boring to stay at home and probably you are out of ideas as well. DON’T WORRY! We got your back! This week we have an easy and amazing empanadas recipe for you to try. You will only need some:

– INGREDIENTS for the empanada dough: Flour, Butter, Water, Salt and Egg joke

And,

– INGREDIENTS for the empanada meat: ground beef, red onion, salt, egg, black pepper, cumin, and paprika

Okay guys let’s keep it short. Now that you have your ingredients set, let’s make sure to have the right amount of ingredients. If you are cooking for 4 people and you want to have like 20 empanadas, you will need:

  • 500g of white flour
  • 200g of butter
  • 1 cup of water
  • 2 eggs
  • Pinch of salt
  • 600g of ground beef
  • Half red onion
  • Pinch of the rest of the condiments

Now that you have the right amount for the ingredients, it is time to get some action and to start cooking. We are going to start with the dough, it is not that hard. So, do not get scared. We are going to put all the dough ingredients together and mixed them with our hand until we have a good texture that it is not too soft or too hard. Then, grab a roller and make little round shape with the dough. You can easily get 20 from the whole dough. After doing that, it is time to work with the filling. Warm up a pan and start cooking the ground beef. After a few minutes, make a little hole in the middle and put the half onion cut in cube shapes there. Finally, add the condiments and mix everything up. When the meat it’s done, boil an egg and cut it in cube pieces too. Finally, add the pieces on the ground beef and stir everything up.

Grab a spoon and put the filling in the middle of the dough, close it carefully and seal it with a spoon on the edge. Then grab an egg joke and use a brush to put it on top to the empanada in order to give it the brown golden look. Preheat the oven at 375 and let it cook for about 25 minutes. When it is ready, get some lemons for the side and some mayo too if you want to.

Stay safe and be careful because this coronavirus ain’t joke! Stay home, wash your hands and order some good Rexburg Empanadas here.
